Sardines are one of the healthiest foods out there, but you shouldn’t have to choke them down. Enjoy them in this bright & fresh bruschetta for a light lunch or high-protein snack!

  • Total Time: 10 minutes
  • Yield: 2 servings

Ingredients

  • 10oz fresh tomatoes, chopped
  • A handful of fresh basil leaves (about 10-15 large leaves), chopped
  • 2 cans sardines
  • 3 cloves garlic, minced
  • 1 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar (possibly a bit more if your tomatoes aren’t very acidic)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Combine all ingredients in a glass mixing bowl and gently stir to combine.
  2. Taste and add more balsamic vinegar if the flavor is still too fishy. Enjoy immediately!

Notes

Not serving immediately? Omit the basil when mixing it up, then add it when you serve it. This prevents the basil from turning black and losing its flavor in the fridge.
