High-Fiber Baked Oatmeal Bites

I’ll confess. Normally, I’m not the biggest fan of oatmeal. If I have a big bowl of oatmeal, I’ll be hungry again shortly after. On its own, it simply isn’t satisfying.

However, that’s where these baked oatmeal bites shine. While oatmeal is usually just oats cooked with milk or water (plus whatever toppings and sweeteners you want), these baked oatmeal bites have eggs, flaxseed meal, chia seeds, and walnuts. The extra protein, fat, and fiber work together to increase satiety and keep blood sugar stable.

With a newborn and hungry toddler, I’m keeping a big bag of these bites in the freezer for quick snacks or easy breakfasts. Plus they’re basically a lactation snack with all the supply-supporting ingredients! They’re also a great grab-and-go breakfast for busy mornings, especially as we enter the back-to-school season.

I especially enjoy serving these baked oatmeal bites with some homemade Greek yogurt. For a real treat, I add some berries from the garden.

Can I add anything to these baked oatmeal bites?

Absolutely! Have fun making these your own. They’re delicious as is, but the opportunities for customization are endless. You can:

  • Add fresh, frozen, or dried fruit
  • Change up the nuts and seeds you add
  • Experiment with spices
  • Indulge by mixing in some chocolate chips

Can these baked oatmeal bites be prepped in advance?

Yes! These are the perfect make-ahead breakfast, whether for hectic school mornings or an early commute to work. They keep in the fridge for 4-5 days. In the freezer, they’re best if eaten within 3 months.

How do I reheat baked oatmeal bites?

To reheat, just take however many baked oatmeal bites you want and microwave them until heated through, 30 seconds at a time. You can reheat them straight out of the fridge or freezer, no need to thaw.

Ingredients

  • 2 cups rolled oats
  • 4 eggs
  • 2 cups whole milk – you can substitute with 2%, skim, or non-dairy options, if you prefer.
  • 1/2 cup (170g) honey – maple syrup also works well!
  • 1 tbsp cinnamon
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 cup chopped walnuts – or other nuts
  • 1/4 cup flaxseed meal
  • 2 tbsp chia seeds

Directions

Step 1: Preheat oven to 350°F. Line two muffin pans with muffin liners (I love silicone liners because they are so easy to remove).

Step 2: Add all ingredients to a mixing bowl and stir until combined.

Step 3: Pour oatmeal mixture into muffin cups, distributing it as evenly as possible. I’ve found that it’s perfect if I fill them about 2/3 full.

Step 4: Bake 25-30 minutes, until completely set and lightly browned on top. Allow them to cool in the pan 10 minutes before removing. Serve warm with a dollop of Greek yogurt or cool completely on a baking rack and freeze for later!
