Pumpkin Apple Baked Oatmeal Bites

Pumpkin apple baked oatmeal will always have a special place in my heart. Fall is my favorite season, and this is the ultimate fall breakfast. Add a dollop of homemade Greek yogurt on top? I’m in heaven.

Perhaps I’m also biased because it was the first thing I ate after giving birth to my first baby (yes, I had some leftovers in my fridge and stuck them in my hospital bag on the way out the door).

But honestly, it’s just so delicious, I don’t think any other reason is needed to explain my love for it. Plus, it’s loaded with fiber and healthy fats for an oatmeal breakfast that actually satisfies. Paired with some Greek yogurt for protein, it’s a balanced breakfast that tastes good enough to be dessert!

Because these are pumpkin apple baked oatmeal bites, they’re also an ideal breakfast for busy mornings (especially in back-to-school season). They’re simple to prep, quick to reheat, easily portable, and pre-portioned.

And while I’m not usually keen on being a short-order cook, if my toddler wants baked oatmeal while my husband and I want eggs (or vice versa), it’s easy to make everyone happy.

Are pumpkin apple baked oatmeal bites healthy?

Yes! Unlike highly-processed instant oatmeal (which can cause major blood sugar spikes and crashes that leave you hungry an hour later), these baked oatmeal bites have no refined sugar and are made with rolled oats. The inclusion of eggs, whole milk, chopped walnuts, flaxseed meal, and chia seeds introduces additional healthy fats, fiber, and protein to help to keep blood sugar in balance (in addition to adding a bunch of other nutrients).

That means that even if you’re being careful with blood sugar or limiting your carbs, these pumpkin apple baked oatmeal bites may be a possible breakfast option for you. Plus they’re small and pre-portioned, so it’s easy to keep your serving size in check.

Can I change or add anything to these pumpkin apple baked oatmeal bites?

Sure! If you want to mix things up, my plain baked oatmeal bites are a great vehicle for experimentation because they’re so forgiving and flexible.

However, if you want to keep them pumpkin apple, there are a couple of ways to vary them without changing their essence. To increase the protein, fiber, and healthy fats, add more nuts and/or seeds (or change up the type for more variety). And if you want to make them more of a treat, you can increase the sweetener (either honey or maple syrup) and/or add some chocolate chips!

Can these pumpkin apple baked oatmeal bites be prepped in advance?

Yes! These are the perfect hand-held, make-ahead breakfast for busy seasons (and is it just me, or is fall always a little hectic?). They will keep in the fridge for 4-5 days. In the freezer, they’re best if eaten within 3 months.

How do I reheat pumpkin apple baked oatmeal bites?

To reheat, just take however many baked oatmeal bites you want and microwave them until heated through, 30 seconds at a time. You can reheat them straight out of the fridge or freezer, no need to thaw.

Ingredients

  • 2 cups rolled oats
  • 1 can (15oz) pumpkin puree – pure pumpkin, not pumpkin pie filling!
  • 1 apple, chopped – any variety will do. I like pink lady apples for their crisp texture and tartness, but you can use a sweeter apple if you prefer!
  • 1 cup whole milk – you can substitute with 2%, skim, or non-dairy options, if you prefer.
  • 4 eggs
  • 1/2 cup (160g) maple syrup – honey also works well!
  • 1 tbsp pumpkin pie spice
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup chopped walnuts – or other nuts
  • 1/4 cup flaxseed meal
  • 2 tbsp chia seeds

Directions

Step 1: Preheat oven to 350°F. Line two muffin pans with muffin liners (I love silicone liners because they are so easy to remove).

Step 2: Add all ingredients to a mixing bowl and stir until combined.

Step 3: Pour oatmeal mixture into muffin cups, distributing it as evenly as possible. I’ve found that it’s perfect if I fill them about 2/3 to 3/4 full.

Step 4: Bake 25-30 minutes, until completely set and lightly browned on top. Allow them to cool in the pan 10 minutes before removing. Serve warm with a dollop of Greek yogurt or cool completely on a baking rack and freeze for later!
